87. Chef-On-Call

Dinner for Two

HAPPY ANNIVERSARY CHARMAINE & PARTNER!

I had such joy cooking this menu spread for Charmaine and her partner's anniversary. I got to meet this thoughtful lady yesterday evening and I'll have you know that she's one gal eager to show her friend's and family that she loves and appreciates them. Very sweet, isn't it?

86. Wholewheat Tortilla Wraps














Guess what I made? Tortilla wraps!
It took me many hours and lots of muscle work, and after it all, I've got a stack of super thin, soft and delish Wholewheat Tortilla wraps!
Cherns thought I was wrapping the wraps, but I told him I was making the wraps from scratch - wholewheat flour, plain flour, salt, Olive oil & water. He was impressed. I'm pleasantly surprised at how my dough and end product turned out too. Now, I can make my very own Western "popiah" wraps for meals!

84. Bo Bo Cha Cha - My way!















I'm in the mood for all things creamy and coconut milky and since they don't make Bo Bo Cha Cha the way I like it elsewhere, I decided to make my very own!

I use freshly squeezed Coconut milk, pure cane Rock sugar (the yellow type), Yam, Indonesian sweet potato, Mini sago and Black-eyed beans. For fragrance, I threw in a bundle of fresh pandan leaves from my garden.

Wonderful! Serve hot, with a drizzle of first layer coconut milk and it'll be just so perfect for a cool rainy day! I especially like how the black-eyed beans are slightly crunchy - adds bite to the entire dish.

83. Oatmeal Raisin Chocolate chips cookies - Ready for CNY?


These are a MUST HAVE for the coming Chinese New Year! I guarantee that if you had these on your table, not only will no one speak to one another because they have these yummy cookies in their mouths (and another in between their fingers), but also because they're searching for more amongst the rest of your goodies or in your kitchen rummaging through your chiller!

Another new item on my list - Oatmeal Raisin Chocolate chip cookies!

These crunchy, light and buttery jewels are made with a little brown sugar, lotsa fluffy oatmeal, raisins and some chocolate chip for sweetness. Terribly addictive, I promise! Hmm...is that a good thing or a bad thing now...? :0P

82. Crispy Bacon Onion and Mushroom Quiche



Cherns asked me to prepare lunch for him yesterday and he mentioned he wanted a sandwich. But a sandwich would be soggy if "ta-pao-ed" (doggie-bagged), so I decided on something healthy, yet filling and this is it...

Crispy Bacon, Onion and Swiss brown mushroom quiche topped with tomatoes and Dill! It's packed with all that filling and held together by fresh eggs, milk and a bit of cream. It's got freshly ground pepper and some nutmeg in it too. All in an ultra thin savory pastry shell. Delightfully light, yet flavourful and packs a punch!

A must have for Brunch or Tea!

PS: I prepared a side of Romaine Caesar salad with freshly grated cheddar cheese for him too!

81. Cranberry Milk cupcakes with Cream Cheese frosting











F. from STB asked me to make something healthy for a meeting with guests who are more health conscious, so I made these newbie cupcakes! (Among other delish Oatmeal raisin cookies which are so yum!)

These milk cupcakes are chunk-ful of dried California cranberries and topped with a tad bit of soft Lemon cream cheese frosting and half a maraschino cherry. It's got less sugar in it - so all the sweetness comes from the berries and the delightful bit of frosting. *Yum*

Old fashion Chocolate cupcakes with Strawberry jam Lemon cream cheese icing from Kris to Elly and her daughter. Hope she gets well soon! *HUGS*
